A multistate outbreak of cyclosporiasis has placed fresh produce safety and Cyclospora testing back in the national spotlight. Federal health officials have traced the outbreak to shredded iceberg lettuce served at certain Taco Bell locations in Indiana, Kentucky, Michigan, Ohio, and West Virginia.


As of July 17, 2026, the Centers for Disease Control and Prevention reported more than 1,644 illnesses, 94 hospitalizations, and no deaths associated with the outbreak. Taylor Farms de Mexico voluntarily removed iceberg lettuce sourced from central Mexico from the U.S. market and informed the U.S. Food and Drug Administration that it would initiate a recall. The investigation is still open.


It is important to describe the findings accurately. Epidemiological data and FDA traceback work have linked the outbreak to shredded iceberg lettuce and identified convergence on a single supplier. FDA and state partners have collected product samples for testing, but the agencies had not publicly reported a positive lettuce sample as of the latest update.


That gap between "the epidemiology points here" and "we found the organism on the product" is exactly why Cyclospora calls for a different playbook than most bacterial pathogens. Testing has a role, but prevention leans just as heavily on water quality, worker hygiene, sanitation, supplier oversight, and traceability.


What Is Cyclospora cayetanensis?


Cyclospora cayetanensis is a microscopic parasite that causes an intestinal illness called cyclosporiasis. People become infected after consuming food or water contaminated with the parasite.


Unlike many foodborne pathogens, C. cayetanensis is only known to infect humans. An infected person can shed immature Cyclospora oocysts in feces, but those oocysts are not immediately infectious. They generally must remain in the environment for one to two weeks before they can infect another person. This makes direct person-to-person transmission less likely and places greater attention on environmental contamination of food and water.


The most common symptom is watery diarrhea, which may be frequent or severe. Other symptoms can include loss of appetite, weight loss, abdominal cramping, bloating, nausea, increased gas, and fatigue. Symptoms usually begin about one week after infection, although the time can range from two days to two weeks or longer. Without treatment, the illness may continue for weeks, and symptoms may disappear and later return.


Why Lettuce and Other Fresh Produce are Vulnerable


Lettuce is often consumed raw and receives no cooking step capable of destroying parasites before it is eaten. Its layered leaves and irregular surfaces can also make physical removal of contamination difficult.


Contamination may occur when produce, water, soil, equipment, containers, or food-contact surfaces are exposed to human fecal material. Potential sources can include contaminated agricultural water, improperly managed sewage or septic systems, inadequate toilet and handwashing facilities, and poor worker hygiene.


Fresh produce may pass through multiple growing, harvesting, cooling, processing, repacking, distribution, and foodservice operations before reaching the consumer. Each stage creates opportunities for contamination to occur or spread if preventive controls are not consistently maintained.



Traditional indicators such as generic E. coli or fecal coliform testing do not directly identify C. cayetanensis. Indicator testing may help identify poor water quality or possible fecal contamination, but it cannot replace testing that specifically targets Cyclospora.


Does Washing Lettuce Remove Cyclospora?


Washing fresh produce under running water can help remove soil and reduce some surface contamination, but washing cannot guarantee that Cyclospora will be eliminated.


The parasite can lodge in plant folds, damaged tissue, or uneven surfaces where water simply doesn't reach. And chlorine or other standard antimicrobial washes? The FDA has been clear that they aren't effective against C. cayetanensis, so routine chemical sanitizing can't be counted on as a complete control.


Cooking can destroy Cyclospora, but lettuce and many other implicated produce items are normally served raw. CDC advises that washing remains an important food-handling practice, although it does not guarantee removal of the parasite.



For produce intended to be eaten raw, preventing fecal contamination before harvest and during handling is more dependable than attempting to remove the parasite from a finished product.


How Is Cyclospora Detected in Fresh Produce?


Cyclospora testing requires a method designed specifically for the parasite. Standard bacterial pathogen panels do not detect it.

FDA’s Bacteriological Analytical Manual Chapter 19b describes a real-time polymerase chain reaction, or real-time PCR, method for detecting C. cayetanensis in fresh produce. The method generally involves washing the produce sample, isolating genetic material from the wash, and using PCR amplification to detect DNA associated with the parasite.


FDA published an updated edition of BAM Chapter 19b in May 2026. Earlier method updates introduced a more specific mitochondrial PCR target for use by FDA regulatory laboratories, while the 2026 revision expanded validated applications to additional fresh herb matrices.


The appropriate method, sample size, produce matrix, collection procedure, and laboratory capability all need to be considered when developing a Cyclospora testing plan. A method validated for one type of produce may not automatically perform the same way with another product.


What Are the Limitations of Cyclospora Product Testing?


A negative result does not prove that an entire field, lot, shipment, or production run is free from Cyclospora. Fresh produce contamination may be present at low levels or distributed unevenly. A laboratory can only evaluate the portion of the product included in the submitted sample.


Sampling plans therefore influence the value of the results. Testing a small number of units from a large lot may miss contamination located elsewhere in the shipment. The timing and location of sample collection also matter. Samples collected in the field may answer different questions than samples collected after washing, cutting, blending, or packaging.


PCR methods detect targeted genetic material. Depending on the method and study objective, a detected DNA signal may not by itself establish whether the organisms are viable or capable of causing infection. Results must be interpreted in the context of the sampling plan, method controls, product history, environmental conditions, and other food safety information.


Cyclospora testing is most useful when it supports a broader risk-based program rather than functioning as the only preventive measure.


What Should a Risk-Based Cyclospora Control Program Include?


The appropriate controls depend on the crop, growing region, water sources, harvesting practices, processing steps, and intended use of the product. A risk-based program may include:


Agricultural Water Assessment

Water used for irrigation, pesticide application, cooling, washing, or ice production can become a contamination route if it is exposed to human sewage. Water sources, distribution systems, nearby land use, flooding, runoff, and septic conditions should be evaluated as part of produce safety planning.


Worker Health, Hygiene, and Sanitation

Accessible toilet facilities, properly supplied handwashing stations, worker training, illness policies, and routine sanitation checks are essential. These measures are particularly important because people without symptoms may still shed the parasite.


Environmental and Infrastructure Reviews

Produce operations may need to assess septic systems, portable toilets, drainage patterns, flooding history, waste management, and the potential movement of contaminated water into growing or handling areas.


Supplier Verification

Supplier programs can evaluate growing regions, water practices, sanitation procedures, audit findings, testing history, corrective actions, and traceability capabilities. Documentation should provide meaningful evidence rather than rely only on a general statement of compliance.


Targeted Testing

Cyclospora testing may be appropriate for selected raw materials, agricultural water, environmental samples, or finished produce when supported by a defined risk assessment. The testing plan should clearly identify what is being sampled, why it is being tested, and how results will be used.


Why Traceability Matters So Much in a Cyclospora Outbreak


Cyclospora's long incubation period means illnesses often aren't recognized until days or weeks after someone ate the contaminated food. By then, the product itself may have moved through several distributors, processors, restaurants, and retailers.


Detailed records can help investigators connect illnesses to specific ingredients, suppliers, growing areas, production dates, and distribution channels. During the current investigation, ingredient-level analysis found that 90 percent of interviewed cases who reported eating at Taco Bell had consumed iceberg lettuce. FDA traceback work then identified convergence on a single supplier.


Effective traceability records may include supplier and customer information, lot codes, harvest or packing dates, growing locations, shipping records, receiving dates, processing records, and the relationship between raw materials and finished products.


The ability to retrieve these records quickly can help narrow the scope of a product removal or recall. Without adequate lot-level information, a response may need to include more product, locations, or dates than would otherwise be necessary.



What the 2026 Lettuce Outbreak Tells Us About Produce Safety


This outbreak is a good illustration of how differently a parasite like Cyclospora behaves compared with the bacterial pathogens most food safety programs are built around. Standard antimicrobial washes may not touch it, routine bacterial testing won't detect it, and limited finished-product sampling can easily miss it.


Cyclospora prevention requires attention to the conditions surrounding the produce throughout its supply chain. Water management, human waste controls, employee hygiene, supplier verification, targeted laboratory testing, and detailed traceability records each provide a different layer of protection.


There isn't a single test or sanitation step that replaces a well-designed produce safety system. The programs that hold up combine prevention, verification, documentation, and the ability to move fast once illnesses or contamination are identified.
